Just when you thought Crystals at CityCenter had it all, Beso and the upstairs nightclub, Eve, have opened their doors to an expectant public. Owned by Eva Longoria-Parker, this second location of her contemporary steakhouse is a spinoff of the original Beso, which is in Los Angeles. And kids, this is no Golden Corral. Longoria-Parker has commissioned the services of Todd English who uses his culinary talents to transform mere meat into Latin-inspired perfection. A few of the menu items include chili-rubbed skirt steak and sauces such as tequila peppercorn and spicy mustard. (On an aside, Eva’s name is mentioned repeatedly on the menu, just in case there is any question who owns the joint.) However, if a slab of cow isn’t your thing, there are several fish and crustacean dishes from which to choose. After gorging on a delightful feast, diners can venture upstairs to the swanky nightclub, Eve, where VIP booths and subtle lighting await. The space is massive—spanning 6,000 square feet—and houses custom-designed chandeliers from Swarovski crystal used for the crystal curtain at the 2009 Academy Awards. In short, it’s worth a visit if nothing else, to view CityCenter from the floor-to-ceiling windows.
